Spinach Walnut Crostini and Cookbook Giveaway!

Tis the season….for a Cookbook Giveaway!  Just in time for the holidays, I’m giving away two signed copies of Nut Butter Universe.  Even if you already have your own copy, you’ll want to enter this giveaway because, as you can see in the above photo, it makes a great gift, especially when you put it in a basket with a jar or two of your favorite nuts and/or nut butters.

Best of all, you can enter this giveaway more than once, since there are FIVE ways to enter:

1. Leave a comment at the end of this post telling me your favorite nut butter and how you like to eat it.

2. Subscribe to this blog.

3. Friend me on Facebook or Twitter (I’m @GlobalVegan)

In the meantime…here’s one of the ways I like to eat walnut butter — I think these Spinach Walnut Crostini will be great to serve over the holidays.  To make them even more festive, I’m going to sprinkle some minced roasted red pepper on top to get that “red & green” thing going!

Spinach-Walnut Crostini

This popular Italian appetizer is made with toasted bread rounds that are usually rubbed with a cut clove of garlic and crowned with a savory topping. This recipe is from Nut Butter Universe by Robin Robertson © 2013.

 

3 garlic cloves

Olive oil

9 ounces fresh baby spinach, chopped

2 tablespoons walnut butter

1/2 teaspoon red pepper flakes

Salt

1 baguette, cut into 1/2-inch-thickslices

2 tablespoons chopped toasted walnuts

2 tablespoons finely minced roasted red bell pepper or sun-dried tomato (for the holidays!)

 

Finely mince two of the garlic cloves and set aside. Cut the remaining garlic clove in half and set aside.

Heat 1 tablespoon olive oil or 1/4 cup of water in a medium skillet over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds. Add the spinach, stirring to wilt. Stir in the walnut butter, red pepper flakes, and salt to taste, blending the walnut butter into the spinach, stirring until any remaining water is absorbed. Keep warm.

Preheat the oven to 400°F. Brush one side of each slice of bread lightly with olive oil. Place the bread, oiled side up, on a baking sheet and bake until golden brown, about 10 minutes. When the bread is toasted, remove it from the oven and rub the oiled side with the cut sides of the halved garlic clove.

Top each piece of bread with a small amount of the spinach topping. Sprinkle with chopped walnuts red bell pepper.  Serve hot.

    My favorite kind of nut butter is almond butter and I love it in the food processor with frozen banana and a bit of cocoa powder or chocolate hemp protein powder…yum!!

    Sorry, but still fall back to good old homemade natural peanut butter, with only peanuts and some oil for ingredients, you can’t beat that on some good whole grain crackers with homemade tomato jam or spicy salsa! But will say the way you put these recipes together and the pictures makes one want to try to make and/or buy another style of butter…

    My favorite is pistachio butter. I make it in my food processor, then throw in frozen chopped bananas for a super quick and delicious pistachio banana “ice cream”.

    My favorite legume butter is peanut. I’ve eaten most of it as a sauce on kale or pasta.

    Second favorite is a seed butter: sesame tahini. I’ve eaten most of that in hummus and baba ghanouj.

    It’s most certainly peanut and I just love to use it for one of your recpies Indonesian Eggplant with Peanut Sauce, a dish I made several time, and just love! I think it’s wonderfully useful in a lot of situations. I also love it on rye bread or just any bread with banana!

    Only nut butter found locally is peanut BUT do remember almond from childhood. Have made my own when peanut butter was not available where I live. Ways to use it? Stirred into hot cereal, spread on toast with hot chunky applesauce on top, in peanut butter – banana smoothies.

    Love them all. I regularly make peanut and almond butter. Sometimes walnut, pecan, cashew, or sunflower seed butter… yum! Eat by the spoonful or on celery, carrot, or apple slices, or on whole grain sandwich bread with raisins and cinnamon.

    My favorite is almond butter. Everyday I make a smoothie with almond butter, almond milk, a couple dates, frozen banana, kale, a pear and a dash of cinnamon n nutmeg. Healthy and delicious!

    I love crunchy peanut butter with banana or jam as a sandwich. It makes such an easy lunch because all I have to do it put some bread and a banana in my bag and head for work. I keep a jar of peanut butter in my desk drawer always – for emergencies! It fills me with cheer at the end of a long morning. 🙂 Not sophisticated, I know, but who cares!

    Almond butter is my favorite but good peanut butter is a very close behind. I love both of them on whole wheat bread. But another way I use almond butter is to mix just a bit with the sweetener (usually maple syrup) and the oil that I use when I make granola.

    Absolutely love homemade cashew butter. It’s fabulous on almost anything but I’m a big fan of mixing it with melted dark chocolate, coconut milk and coconut for an easy, delicious fudge.

      if you arent a huge fan of curry,like my daughter,try buying fenugreek,can be bought whole and use your spice grinder or already ground.its one of the spices in curry powder that gives it the”curry”flavor,by itself is much milder.i got mine at a fabulous local indian market,but some larger grocery stores may have it or your local whole foods organic type market

    I love all nuts and the butters they produce but I have been a lifelong devotee of the peanut. PB&J, PB on celery or apples or bananas… and most deliciously of all peanut butter sauce! on noodles, stirfries, anything really. mmmm.

    So hard to pick a favorite but I’d have to go with cashew butter…my fav way to use it is to add a couple tablespoons to my creamy cauliflower/potato soup, makes it so rich and creamy while keeping it dairy free!
